Hi,
I am a Permanent Resident of Canada. I will apply for Canadian citizenship in one year. I am currently single (never married). I am planning to sponsor PR for my parents as I satisfy all the required criteria.
In future, if I marry a non-Canadian spouse and would like to sponsor for Permanent Residency, will that sponsorship process be affected if my parents sponsorship is still in process?

the undertaking term must be complete before you can take on another sponsorship. Family is 10 years once they are approved which can take 3-4 years. Spouse is 3 years. You may want to consider switching things around or marry a local girl!

You can have as many sponsorship undertakings as you want as long as you meet the requirements to sponsor in each one of them.
This is the second time I see in this forum that someone believes there is a limit on the number of concurrent sponsorship undertakings.
Look at section E on page 4:

Now tell me where do you see that having an existing undertaking renders the sponsor ineligible for an additional sponsorship undertaking.
