Subject: Why is it that....
  I´m originally from the US. I´m now married to a Canadian and we are soon going to submit our In-Canada Sponsorship application. I found out that once the application is sent and in process I can not leave Canada to go back to the US until it is complete. Why is that? I don´t understand. I´m not allowed to go visit my family? Or if I have a small job opportunity that would take only 3 weeks I could not do it?

you can leave, but the border officer is under no obligation to let you back in. By filing an inland application, you are declaring your intent to remain in Canada - therefore ´visiting´ is not your true intent. make sense?

The last thing CIC wants to do is go through the pain and expense of rounding you up and deporting you if things don´t go according to plan with your application. Therefore, CIC would prefer that you wait outside the country to complete your immigration.

Why are you submitting an inland application? it takes twice as long as an outland and there is no option for appeal.

I´m submitting an inland because I don´t want to leave my wife. We´ve spent a lot of time apart and we don´t enjoy it. I do now understand why I must stay in Canada, but I just think it´s silly, because if things didn´t go according to plan immigration wouldn´t have to deport me, I would leave. I´m not that kind of person.

You would voluntarily, leave your wife in Canada and return to the US? you may not be that kind of person but thousands of others ARE.

Consider this idea - get yourself a US address - submit an outland application. Visit your wife regularly (just be careful what you say at the border), or have her visit you. Literally half the time to process.

I wouldn´t leave my wife in Canada. We would try things from the US side. Thanks for all your help though!
