I am a born US citizen and I´m currently going though an IN Canada Spouse Sponsorship. May I leave Canada while its being processed? Why and Why not?

you can, but they may not let you back in. Immigration really does not like inland applications - because it is so difficult to get people out if things are not legit. better to keep you out of the country until you are given your PR.
so, the risk is yours. People go back and forth all the time but it always a nerve wracking exercise.

I would say go there and if you suspect probs getting back in, try walk thru the border.
